Ingredients
2 medium/large cucumbers, thinly sliced
1medium red onion
1tbsp. extra virgin olive oil
¼ tsp. salt
½ tsp. black pepper
½ cup white balsamic vinegar
Instructions
In a medium bowl, combine all ingredients in a bowl and mix well without crushing the cucumbers.
Cover and refrigerate for up to an hour, then serve chilled.
NOTES
This salad is great on its own or as a side dish.You can boost the fiber & nutrient intake by adding a cup of sliced cherry tomatoes.You can boost protein by adding mozzarella pearls.Enjoy!
