Ingredients
1plantain, very ripe , yellow with lots of black spots or mostly black
1-2tbspavocado oil, coconut oil, olive oil, or butter
Garlic powder or cinnamon, to taste
1pinchsea salt, optional
Instructions
Peel the ripe plantain by cutting off both ends and making a shallow slit down the side of the peel.
Slice the plantain into coins or diagonal slices.
Heat oil or butter in a skillet over medium heat.
Add the plantain slices in a single layer.
Cook for 2 to 4 minutes per side, until golden brown, caramelized, and soft in the center.
Remove from the skillet and sprinkle with garlic powder for savory-sweet flavor or cinnamon for a sweeter dessert-style flavor.
Add a tiny pinch of sea salt if desired.
Serve warm and enjoy.
NOTES
Use a very ripe plantain for the sweetest flavor. The more black spots on the peel, the sweeter and softer the plantain will be. Use garlic powder for a savory-sweet version or cinnamon for a dessert-style version. Nutrition will vary based on plantain size and how much oil or butter is used.
