Ingredients

cups
frozen watermelon chunks
,
(seedless is best)

tbsp
raw honey
,
(adjust to taste)
1
pinch
quality salt
,
sea salt or baja gold
juice from 1/2 lime (optional)
,
or a sprinkle of lime zest
Instructions
Cut up fresh watermelon flesh into chunks (1-1.5" cubes) and freeze.
Once frozen, place the frozen watermelon chunks into a high-speed blender or food processor.
Add honey, salt, and lime juice (if using).Blend on high, using a tamper if needed, until smooth and creamy.
You may need to pause and scrape the sides.
Serve immediately for a soft-serve texture. For a firmer sorbet, freeze for 30 minutes before scooping.
