Ingredients

cups
cucumber
,
peeled and finely diced, organic cucumber recommended (about 1 large cucumber)
1/4
cup
white, sweet, or red onion

finely diced
1/2
cup
cherry tomatoes
,
finely diced, organic cherry tomatoes recommended
Juice of 1–2 limes
,
(approx. 2 tablespoons)
Salt to taste
,
(start with 1/4 teaspoon and add more to taste)

white vinegar or apple cider vinegar

Optional: for extra tang

jalapeño or serrano pepper,

Also Optional: finely minced (seeds removed for less heat)
Instructions
Combine diced cucumber, onion, and tomato, in a bowl.
Add the fresh lime juice ((and vinegar, if using).
Season with salt, then stir gently to combine.
Let sit up to 30 minutes in the fridge to allow flavors to meld.
Enjoy!
NOTES
Serving Ideas:
Serve with organic tortilla chips
Spoon over grilled fish, shrimp, or chicken.
Use as a topping for tacos or burrito bowls.
Add onto a salad.
Enjoy as a side dish.
