EQUIPMENT

  • 1 Knife
  • 1 Cutting Board
  • bowl

Ingredients

  • 2 cups cucumber, peeled and finely diced, organic cucumber recommended (about 1 large cucumber)
  • 1/4 cup white, sweet, or red onion, finely diced
  • 1/2 cup cherry tomatoes, finely diced, organic cherry tomatoes recommended 
  • Juice of 1–2 limes, (approx. 2 tablespoons)
  • Salt to taste , (start with 1/4 teaspoon and add more to taste)
  • 1 tsp white vinegar or apple cider vinegar, Optional: for extra tang
  • 1 jalapeño or serrano pepper,, Also Optional: finely minced (seeds removed for less heat)

Instructions

  • Combine diced cucumber, onion, and tomato, in a bowl.
  • Add the fresh lime juice ((and vinegar, if using).
  • Season with salt, then stir gently to combine.
  • Let sit up to 30 minutes in the fridge to allow flavors to meld.
  • Enjoy!

How I discovered Cucumber Salsa

 

A few summers ago, cucumber salsa became a staple when I was looking for recipe inspo while I was doing my Reset Cleanse.
