Super Easy Cowboy Caviar
INGREDIENTS
- 3 cans of beans (black, red, chickpeas, white, and kidney work. Pick your 3 favorites – Bonus points if organic, Double points if you use BPA free cans)
- 1 1/2 cup diced onion
- 1 cup stewed tomatoes with chiles
- 1/4 cup cilantro, finely chopped
- garlic, optional
- 1/2 cup red wine vinegar
- salt and pepper to taste
INSTRUCTIONS
Drain, rinse, drain, dry, and pour into a bowl.
Then add diced onion, tomato, cilantro and garlic, red wine vinegar, salt and pepper to taste.
NOTES: Cut the onion into small diced sizes here. Beans should be the star of the show. Not chunks of onions! ????
I make a batch of this on a Sunday to last a couple days as a quick protein source & snack.
I use 1/2 cup of this fiber filled awesomeness with hot sauce, to top salads, tacos, and substitute for things like mashed potatoes, white rice, pasta, and fries.
I love making this for pool parties, BBQs, and football parties, too because it doesn’t have mayo and everyone loves it.

How much red wine vinegar?I’d like to try this, especially because I love red wine vinegar, but it just says 1/2 without a unit. Thank you!
Hi Deborah, it’s 1/2 cup. You can adjust up or down to suit your tastes. I like to let it sit with 1/2 cup so it’ll soak up the vinegar. It’s so yummy!
1/2 of what for the red wine vinegar—–1/2 cup? 1/2 TB? 1/2 tsp?

Love! Love! Love!! I was going to add the ingredients to my shopping list when I realized I had them all, so I made it tonight. I’d made hubby hot wings so I used hot wing sauce instead of hot sauce. Yum.

I take probiotics and don’t really get gas… but it’s super natural with beans. 🙂
