Today I’m sharing five delicious summer salad recipes because I love summer salads. They don’t necessarily have to be eaten only during the summer, but let’s be honest, salads just hit different when produce is fresh, colorful, juicy, and in season.

Personally, I love summer salads because they’re fresh, light, easy-to-make, and delicious.

Professionally, I love them because they can be an amazing way to support fat loss, boost metabolism, improve energy, help digestion, and get in a ton of fiber, micronutrients, and protein without a ton of calories… assuming you’re building them the right way.

This one screams summer in the best way. It’s juicy, colorful, antioxidant rich, and super easy to throw together.

Ingredients:

  • 5 cups mixed greens or baby spinach
  • 1 1/2 cups grilled chicken, sliced
  • 1 peach, sliced
  • 1/2 cup blueberries
  • 1/4 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons pumpkin seeds or sunflower seeds
  • 2 tablespoons crumbled feta, optional

Simple dressing idea: Olive oil, white wine vinegar, lemon juice, sea salt, and pepper.

How to make it: Pile the greens into a bowl and add the chicken, peaches, blueberries, cucumber, onion, seeds, and feta. Toss gently with dressing before serving.

Those are the foods with the highest pesticide residue, so they’re the ones I’m most picky about buying organic. The same goes for proteins when possible too.

2. Add protein if you want your salad to actually keep you full – A lot of people make salads that look healthy but leave them hungry an hour later. Adding grilled chicken, shrimp, turkey, edamame, eggs, steak, salmon, or beans can make your summer salad recipes a lot more satisfying and way better for metabolism, blood sugar, body composition, and energy.

3. Don’t be scared of healthy fats – Healthy fats like avocado, olive oil, nuts, seeds, and olives help with hormone health, satiety, flavor, and the absorption of fat soluble vitamins. In other words, they matter.
