This Healthy Lazy Girl Chili Recipe is one of my favorite go-to meals in the fall – it’s cozy, delicious, and loaded with nutrients that help you stay full and energized.

As a functional health practitioner and nutritionist, I’ve found one of the easiest ways to help clients feel better and get results is by giving them nutrient-dense meals that are simple to make and easy to stick with.

This chili is exactly that. It’s hearty, flavorful, family-friendly, and made with clean, real-food ingredients that support your metabolism – not sabotage it.

Easy, Healthy Chili

 

Chili Ingredients

  • 2 pounds lean, organic ground beef
  • 5 tbsp. garlic, minced (I use “jarlic” – garlic in a jar for convenience)
  • 1 teaspoon cumin
  • 3 tablespoons chili powder, divided (2 tbsp to brown the beef, the rest when simmering)
  • 1½ yellow or sweet onions, diced (reserve some for topping)
  • 1 jalapeño, seeded and finely diced (optional)
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 can (19 oz) red kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 cup bone broth (sub beef, chicken, or veggie broth)
  • 2 tbsp. tomato paste
  • Salt and pepper, to taste
  • Louisiana-style hot sauce (optional – about 2 tbsp. or to taste)

Instructions to make Chili

  1. In a large pot over medium heat, combine and cook the beef, 2 tbsp. chili powder, cumin, garlic, onions, and jalapeño until the beef is browned.
  2. Use your spoon to break up any clumps, stirring continuously until evenly cooked.
  3. Drain as much excess fat as possible, then return the meat to heat.
  4. Add the rest of the ingredients and cook over medium heat for 15 minutes.
  5. Reduce heat to low and let it simmer for 30–60 minutes uncovered, stirring occasionally, until it thickens.

Tips to Keep Chili Clean and Healthy

 

  • Choose organic, grass-fed beef whenever possible for cleaner protein and better omega-3 content.
  • Use BPA-free or organic canned beans, and rinse thoroughly to remove excess sodium and residue.
  • Add extra veggies like zucchini, mushrooms, or spinach to stretch the volume and boost nutrients.
  • Top it clean: diced onion, cilantro, fresh lime juice, or sliced avocado.
